Chef Matthew Ridgway (The Fountain Room, Lacroix at The Rittenhouse, both in Philadelphia) is behind the PASS. A three-course prix-fixe menu is offered four evenings a week, highlighting French-inspired cooking. Expect the chef’s PorcSalt charcuterie products among the selections on occasion, along with the likes of roasted Atlantic hake, tomato brandade involtini, chickpea socca cake and Basquaise sauce; lamb steak with coffee vinaigrette; and a selection of local cheeses.
