Situated in the heart of hot and happening downtown Tucson, Proper brings the best of local ingredients to the table. Some examples? A pork shoulder rubbed with coffee from an area roaster and turned into barbecue for a sandwich, or the polenta from nearby Hayden Mills that arrives topped with poached eggs, mushroom ragoût, tomatoes, arugula and Black Mesa chèvre. At dinner, the duck breast is sourced from a farm in Benson, which is just down the road. Brunch offerings, including the andouille and eggs, are whimsical and full of intriguing flavors. We could even make a meal of just the appetizers like the Queen Creek Olives, ricotta gnocchi and the Prop Prop wings that are a little sweet, a little hot and absolutely addicting. Add any one of the creative cocktails and you’re guaranteed a fine time. Try the Front Porch, a mix of black tea-infused vodka, a dash of citrus and rosemary simple syrup.
