This elegant steakhouse has been earning kudos since it debuted at the hotel in 1997. The view of the Las Vegas Strip through a bank of massive windows enhances the friendly fine-dining experience that begins with a gift of friendship---a plate of bagel chips and salsa for the dipping. Among appealing appetizers turned out in the shiny copper exhibition kitchen are roasted corn crab cakes with shrimp and corn salsa, oysters Rockefeller, and a Southwestern artichoke and lump crab dip with grilled pita chips and soft pretzels. The brandied Maine lobster bisque is topped with crème fraîche. Entrées, served with house or Caesar salad, include a wide selection of chicken, seafood, steaks, and chops. Go for the garlic-lime shrimp with a grilled tortilla, fettuccine and red chile oil. We like the peppercorn-crusted tuna mignon with smoked tomato vinaigrette and the dramatically presented herb-crusted Australian rack of lamb with mint coleslaw. Among steaks meticulously prepared to your taste are an eight-ounce filet mignon with Gorgonzola onions, a 16-ounce blackened rib-eye chop, a 20-ounce bone-in New York strip and a 24-ounce porterhouse. Desserts include an ice cream and sorbet trio attractively served on an ice block, crème brûlée caramelized tableside and served in a raspberry tartlet, and the chocolate, raspberry and Grand Marnier soufflés spooned tableside with crème anglaise.
