Welcome to the restaurant of Akrame Benallal, a young chef who honed his skills with Ferran Adrìa and Pierre Gagnaire. The contemporary dining room is a bit cold, with its grey tone, but the spectacle of the open kitchen adds liveliness. Dishes are creative, cooked with fresh products, and suggested on an imposed menu, according to the season and the mood of the chef. So, depending on the day you dine here, you may be treated to sea bream carpaccio enhanced by black quinoa and Parmesan, mackerel garnished with a Comté cheese coulis and cauliflower shoots and, for a finale, lemon panna cotta with acacia sherbet. A fine selection of wines complements this delicate fare.
