Line-caught seafood, naturally-raised game and organics fill the menu at Restaurant Charlie, the 85-seat dining room at The Palazzo Resort in Las Vegas. Unlike at Trotter's Chicago temple, cocktails and an à la carte menu are available. Better win big: an appetizer of red kuri squash soup with prawn dumplings and preserved ginger will set you back $26. It's double or nothing on the entrées. Seared kampachi with braised veal cheek and hedgehog mushroom sauce reaches the $50 mark. A highlight: The chef's kitchen table perched in the air above the action accommodates eight and offers a spontaneous tasting menu. Preparations and presentations in the dining room follow the avant-garde style of chef Trotter. So too do the small plates at Bar Charlie. Score a seat at the small counter space and experience high-end seafood showcased in traditional preparations of à la carte sushi and sashimi or eat East-meets-West kaiseki prepared right in front of you. Just let the chefs know how hungry you are and they'll concoct an eight or fourteen course menu. The décor, with its modest brown and earthy-blue palette, might put off some customers in search of flash. However, chef Trotter is already working on a plan to update the décor.
