This intimate two-story bistro, tucked away on a tiny street in the Rambuteau area, causes quite a stir with its reasonable prices and quality cuisine. The owner and chef Mickaël Gaignon, who worked for more than seven years with Pierre Gagnaire, turns out plates that emphasize technique and culinary sensitivity. The red and yellow beets, pork feet croquettes with foie gras, and the langoustine pie with fresh seasonal mushrooms are popular appetizers. Roasted French veal, served with white haricot beans, is silky and tender. As a dessert, the iced quince with maple syrup and a crispy tuile is a great choice. Menu €18, €24; à la carte €50.
