Rien van Santen opened his seafood house more than 20 years ago, its formal dining room looking just a wee bit tired these days. No matter, as the outdoor patio overlooking the charming Herengracht houses is the place to sit. The menu is all about just-from-the-water mussels, oysters, sole, turbot and other titans of the sea, all revealed on a daily chalkboard. Saucing and garniture is kept to a minimum---maybe a tarragon mustard sauce or a simple teriyaki glaze, all the better to showcase the freshness of the fish. The house-smoked salmon is not to be missed, nor is the classic tarte Tatin for dessert.
