Top Miami pastry chef Hedy Goldsmith earned a bachelor's degree in film and photography at the Philadelphia College of Art, but an interest in baking led her to study pastry at the Culinary Institute of America. Her first position as assistant pastry chef at The Waldorf-Astoria in New York segued into the world of corporate catering. A move to Miami brought Goldsmith back to the pastry kitchens with a five-year run at Mark's Place. Joining Nemo began her lengthy, ongoing position overseeing the dessert menus for this Miami favorite and its sister restaurants Shoji Sushi (ginger crème brûlée with plum-saké compote, green tea cheesecake) and Prime 112 (these sweets are super-sized and include the favorite, cheesecake with bananas Foster). Goldsmith looks to chocolate, citrus and seasonality for her creations, yet due to popular demand and the area's tropical vibe, Key lime is never far from her repertoire.
