Gérard and Virginie Ferry have a knack for picking remarkable talent to lead their always-captivating, near-historical West Hollywood restaurant. In choosing Christophe Bellanca to direct the stoves, we find their gift intact. The classically-trained, French-born chef’s cooking demonstrates respect for product while not bypassing creativity—to wit, foie gras and crème brûlée are four words we never imagined we’d use to describe one dish, yet thanks to Bellanca, we sing its praises.
