Roussels New Orleans Creole cooking is the real thing, made just a little milder for Hawaii tastes. Owner Spencer Oliver who has cooked in New Orleans and New York City for 20 years before moving to the Islands made a name for Roussels in Hilo. In the past, we planned our Hilo arrivals so we could lunch at his restaurant housed in a renovated bank, but now we head to Kohala to enjoy his same great cooking in a setting with open-beam ceilings and rattan furniture. Of course, his menu has the obligatory blackened fish, gumbo and shrimp Creole, as well as trout Alexander, a poached filet in a cream sauce of lobster, shrimp, mushrooms and sherry. In addition to prime rib and chicken, Oliver also prepares a duck dish in a rich veal stock seasoned with rosemary and cracked pepper. A cozy private room is available for intimate parties. Besides a full bar, theres a complete wine list, with California and French wines available by the glass.
