Neighborhood hangouts often coast on their location, but Sage has additional strategies for success: promoting seasonal ingredients and local beers as well as its environmentally friendly back-of-the-house policies. (Oddly, local wines have not yet found a way onto the menu.) Tourists from the nearby Anheuser-Busch InBev brewery tour enjoy the St. Louis-style ribs rubbed with 15 spices. Blackened steak and shrimp penne are also available. The “dessert shots” rotate seasonally, with six offerings priced less than $2 apiece --- frequently featuring fresh Missouri produce, as in the blueberry-chocolate-coated cheesecake. The dining room is welcoming and not overly loud, though in the summer months most opt for the spacious, shaded patio or second-floor balcony.
