Salute Trattoria Italiana is located just off of Red Rock’s main casino entrance. Guests can dine on the expansive outdoor patio or indoors, where floor-to-ceiling windows provide an airy feel. The interior also features marble focal points, a burnt-orange color scheme, wood accents, tile flooring and an open kitchen. Food canisters and baskets on shelves help to set the scene. Enticing antipasti include ahi tuna crudo with blood orange aïoli and crisp squash blossoms with pistachio pesto. From the pizza menu, we like the Bianco with sun-dried tomato pesto, pecorino and buffalo mozzarella. For a pasta course, try the truffle ravioli (ricotta and truffle sottocenere agnolotti with foie gras-Cognac crema) or Salute signature pasta with Roman-style pepper and cheese sauce served tableside in a pecorino cheese wheel dramatically set afire. Hearty entrées can be found in the grilled 16 oz. veal chop with sage crema, 32 oz. Prime porterhouse for two with black garlic-porcini butter and whole roasted Mediterranean sea bass with Ligurian olives, fennel and marjoram. The wine list has selections hailing mainly from Italy, France and California with 22 offered by the glass. Finish with cannoli filled with ricotta, cinnamon, candied orange, pistachios and chocolate or warm Nutella cake with crème anglaise and vanilla gelato.
