Sensing at the Fairmont Battery Wharf is inspired by chef Guy Martin’s restaurant in Paris of the same name. Martin’s first restaurant in the U.S. utilizes seasonal New England ingredients. Dishes include cauliflower and quince soup with chestnut foam, salmon tournedos in nori with bok choy and stir-fried pineapple, and Prime rib-eye steak with eggplant fries. A variety of cocktails is offered in the Sensing Lounge.
