Solaia’s underground space, composed of closely arranged wooden tables created from crates bearing the imprint of the fine wines they kept, and blackboards indicating wine selections, almost compels diners to sit and linger, sampling the extensive wines by the glass while enjoying the Italian cuisine. Pair the fruity Chilean Sauvignon Blanc from Casa Lapostolle and the Maine diver scallops served with a purée of spinach. Or try the hearty ragù bolognese with al dente tagliatelle, complemented by an Italian red wine. With the addition of cuisine that focuses on Champagne as a main ingredient, Solaia has given diners another reason to come wine and dine while enjoying the festive atmosphere.
