New chef Jeffery Constance seems to have a good handle on things. His three-course prix-fixe dinner choices are intriguing and pleasantly balanced. Start with poached lobster draped over a salad of shave fennel and sunchokes or the smoked duck roulade. Move on to either the pan-roasted guinea hen with creamy polenta and chanterelles, or pan-roasted salmon with celery root purée and lobster bordelaise. A pleasant finish involves either a luscious coffee torte with malt semifreddo or warm quince consommé with a duet of sorbets---orange marmalade and cranberry. The room is spacious and airy, albeit rather stark, but the service is good, and theres an excellent wine list.
