In a stylish and lively dining room that (not surprisingly, given its resort location) is equally suitable for romantic interludes, business dinners or large party gatherings, chef-partner Kevin Nelson turns out an inspired and mostly organic menu built around seasonal and local ingredients as well as global influences. Start with such clever snacks as taleggio-stuffed brioche “fingers” accompanied by tomato soup dip or wasabi foam-topped scallop crudo with strawberries and sea beans. Follow it with an entrée that’s no less fun for being ultra-sophisticated: Jidori chicken oysters over jalapeño-corn purée with bacon cornbread and pickled watermelon rind, for instance, or grilled trout with an agrodolce-style raisin-onion stuffing in pine nut vinaigrette. For dessert, saffron panna cotta in lemon syrup with crystallized violet petals and prickly pear sorbet is a study in edible grace. As an added bonus, Terra features one of the Vail Valley's most extensive wine lists, with several pours by the glass.
