Gettin down on the dance floor at Tipitinas, a legendary music club on the Uptown waterfront, tends to sharpen an appetite for eats that match the sense of funk emanating from the bandstand. For an emergency infusion of down-home Creole, Tips offers a protein-rich red beans and rice with smoked sausage, a plate shrimp Creole and rice overflowing with tomato-rich sauce (red gravy is the proper term in this case), or a lusty jambalaya loaded with chicken and andouille sausage. It may not be the ultimate in refined eating, but refinement is not what this paragon of New Orleans dance halls is all about.
