What was once known as the spot in Santa Monica for happy hour margaritas, the restaurant at the top of the Radisson Huntley is growing up. Chef Robert Gadsby has taken the helm and as a result, the cuisine has evolved from guacamole and salsa to a sophisticated spin on Cal-Mex cuisine. A poblano chile is stuffed with minced chicken and cotija then served in a green tomatillo mole. Other Mexican dishes include a vegan tortilla soup and decadent lobster-and-brie quesadillas. The menu also embraces more typical Californian dishes like a three-tomato salad with micro greens, designer pizzas and a poached salmon salad. Although the restaurant is gradually developing more of a romantic clientele, drawn by the panoramic views of Santa Monica, Malibu and (on a clear night) the entire South Bay, the casual, clubby atmosphere is still popular with the mixed drink crowd who come in droves for the addictive margaritas and enormous servings of sangria.
